Yuan Wonton’s – This Asian restaurant in the North Park Hill neighborhood serves wontons along with other Chinese cuisine. This Denver spot opened about a year ago after spending four years as a food truck business. The New York Times specifically mentioned their Trung Va trung which is described as  a soft scrambled egg, brown butter, fish sauce, trout roe and rice.

Meander Eatery – It’s a farm-to-table restaurant in the only spot in Colorado on this list that is not in Denver. The establishment is Pagosa Springs opened in 2022 and has since reached the eye of the New York Times.
