Trish Browning - Chocolate Cherry Cordial Cookies
|
Here is my #1 requested Christmas cookie. I have been making these for about 20 years now and people never get tired of them. They are VERY RICH, so one cookie usually is good.
Ingredients:
1/2 Cup Land O'Lakes Butter
1 Cup Sugar
1 Egg
1 1/2 Teaspoon of vanilla
1 1/2 Cup All-Purpose Flour
1/2 Cup Unsweetened Cocoa Powder
1/4 Teaspoon Baking Soda
1/4 Teaspoon Baking Powder
1/4 Teaspoon Salt
1 10 ounce jar maraschino cherries
1 6 ounce package (1 Cup) REAL semi-sweet chocolate chips.
1/2 Cup Sweetened Condensed Milk Pre-heat oven to 350.
Directions:
In a large bowl beat butter till softened. Add sugar and beat till fluffy. Add egg and vanilla, mix well. In another bowl mix flour, cocoa powder, baking soda and powder, and salt. With mixer on low, gradually add flour mixture to butter mixture, beating till well mixed. Shape dough into 1" balls. Place about 2" apart on ungreased cookie sheet. (I like to line my cookie sheets with aluminum foil, easy clean up.) Press down center of each ball with your thumb or something that will make an indentation to hold the cherry. Drain cherries, reserving juice. Place one cherry in the center of each cookie. For the frosting, in a small saucepan combine chocolate and condensed milk. Cook and stir over low heat till chocolate is melted. Sitr in 4 teaspoons reserved cherry juice. Spoon 1 teaspoon frosting over each cherry, spreading to cover cherry. THIS IS DONE BEFORE YOU BAKE THE COOKIES. If necessary, you can thin frosting with more cherry juice. YUM! Now bake for about 10 minutes or till edges are firm. Remove from cookie sheet when out of oven with spatula and place on cooling rack to cool. Makes about 3 dozen cookies, if you don't eat a lot of the dough.
